Our friends at Spanish restaurant The Iberian Pig shared this delish recipe with us…perfect for a winter night at home by the fire. This squash is seasoned with cumin and coriander and topped with a spiced yogurt. Pair the dish with a Rueda Oro de Castilla Verdejo or Ribera Finca Resalso to create a tasty, flavor-filled meal.
Delicata Squash
4 qt Sliced Delicata Squash (sliced in ¼ inches)
2 Tbsp salt
½ tsp pepper
1 tsp ground cumin
1 tsp ground coriander
Blended oil
- Slice squash in half lengthwise – then deseed – then slice to ¼” thickness
- Toss in blended oil to coat
- Season with salt, pepper, cumin, coriander
- Roast at 350 for 5 min.
- Remove from oven and cool
Spiced Yogurt
2 qt Greek yogurt
1 Tbsp honey
½ tsp salt
½ tsp pimenton picante
1 tsp ground coriander
1 tsp ground cumin
½ tsp ground fennel
1 lemon (zest)
- Place yogurt in bowl
- Season with spices and honey
- Mix in lemon zest
