Gourmet Chips & Boquerones

This is an exceptionally easy recipe for boquerones with potato chips. All it takes is a bowl of any of the new and utterly delicious gourmet potato chips, a plate of marinated white anchovies called boquerones, a bundle of toothpicks for spearing the fish, and voilà – your own version of fish and chips. It hits pretty much all the wine pairing notes, costs mere cents to make, and elicits a huge return on the satisfaction index. Simply put, everyone will love it.

Get a two-fer with those boquerones by riffing on the traditional gilda (hyperlink to Gilda section in previous article). Stack one on a toothpick along with a Basque pepper, big green olive, and a chunk of Manchego cheese that’s been bathed briefly in olive oil.

Ingredients

  • 5pc Boquerone Filets
  • 1oz Olive Oil
  • 2oz Olive Oil Potato Chips


Directions

  • Arrange the Boquerones or Anchovies on the plate.  
  • Add the Olive Oil.  
  • Place the Chips in a bowl.


Notes: This can be made a few minutes before serving.  Serve on small plates. Serve separated or build a pile of chips and place fish on top! Olives are optional but encouraged.

  • Garcia de la Cruz Olive Oil
  • Jose Andres Olive Oil Potato Chips (or similar gourmet chips)
