The secret to the best experience is to arm yourself with your favorite chewy bread. When the oil meets the cheese, dripping from a toothpick destined to meet the bread of choice, one would be hard to find a better moment in life. Corks away for Verdejo and Tempranillo from Spain’s most prestigious wine regions. Can’t get much better than this!

Marinated Manchego Cheese

Servings: 4 people
Prep Time: 15 min
Total Time: 15 min

Ingredients

• 1ea Queso Manchego
• 1t Black Peppercorns, Toasted
• 1ea Arbol Chili, Toasted
• 1pc Rosemary, Stem Removed
• 1ea Peel of Entire Lemon
• 1.5C Olive Oil

Directions

• Dry toast the spices in a pan.
• Cut the rind off of the cheese then cut into 1inch cubes.
• Place everything minus the oil into a container.
• Add the oil.
• Allow to marinate for 24 hours before using.

Note: Allow to come to room temperature before serving, about 1 hour.
