Marinated Manchego Cheese

Ingredients
• 1ea Queso Manchego
• 1t Black Peppercorns, Toasted
• 1ea Arbol Chili, Toasted
• 1pc Rosemary, Stem Removed
• 1ea Peel of Entire Lemon
• 1.5C Olive Oil
Directions
• Dry toast the spices in a pan.
• Cut the rind off of the cheese then cut into 1inch cubes.
• Place everything minus the oil into a container.
• Add the oil.
• Allow to marinate for 24 hours before using.
Note: Allow to come to room temperature before serving, about 1 hour.
